Tide Table

Our main restaurant, a palm-thatched pavilion on the lagoon's edge, cooking the islands' own flavours with fish landed that morning by the Baa Atoll pole-and-line fleet.

The room

Tide Table is where the island gathers. Breakfast is a long, slow affair of tropical fruit, coconut pancakes, mas huni with warm roshi and eggs cooked any way you like. At lunch the sides roll up and the sea breeze comes through. In the evening the lanterns come on and the kitchen turns to the Indian Ocean: reef fish curries, tuna cooked over coconut husk, Sri Lankan hoppers and Keralan moilee, with a garden of herbs grown behind the kitchen.
